Rad na and pad see ew use the same wide noodles, the same pork and the same kale, and one is 397 while the other is 679. The gravy is the difference. In rad na the noodles get a quick sear and then sit under a soybean and stock gravy thickened with tapioca starch. That gravy is about 80 calories for 150ml. In pad see ew the same noodles fry in 180 calories of oil.
The plate is also huge. 354g is one of the biggest servings in the Thai food table, and it is 40 percent gravy. So you get a plate you cannot finish for under 400 calories, with 18g of protein. That is a good deal by any measure, and it is why rad na is the plate to order when you want noodles at night.
The extras are where it can slip. The vinegar chilies and prik pon on the table are free. The sugar jar is not, and a lot of people spoon two teaspoons in, which is 30 calories. Rad na mee krob (over crispy fried egg noodles) instead of wide noodles is a different dish at around 560, because the crispy noodles are deep fried.
