The number that surprises people is not the pork, it is the dressing. A dry bowl gets a spoon of lard, a spoon of chilli oil, and the crispy lard bits on top. That is about 20g of fat right there, close to 90 calories, and the stall does it before you can say anything. The 150g of mee pok is another 230 calories. Meat, liver, mushrooms and two meatballs together come to only about 170. So a 511 calorie bowl is really 60 percent noodles and oil.
The soup version drops to around 420 calories because there is no lard dressing and the noodles sit in clear broth instead of oil. Same pork, same liver, same mushrooms. If you order dry, you are paying about 90 calories for the vinegar and lard taste. Some people think that is worth it. Just know the trade.
Price matters here too. The S$4 bowl at a normal hawker centre is the 511 calorie one. The S$6 or S$8 bowl at the famous stalls comes with extra meat, an extra ladle of lard and sometimes abalone, and it lands closer to 650 to 700 calories. Bigger bowl, more noodles, more oil. The fancier the stall, the heavier the bowl.
