This is the fatty soto, and the broth is the reason. Coconut milk, sometimes evaporated milk on top of that, and the fat that renders out of beef brisket and offal. A 200ml ladle of the broth alone is about 135 calories, more than the meat in the bowl. The white creamy look is not a trick of the light, it is 27g of fat per bowl.
The meat is usually a mix: 80g of daging, babat (tripe), paru (lung) or usus, about 150 calories. Daging only is the leanest choice. Paru goreng versions are heavier because the lung is fried first, adding maybe 60 calories. The fried potato and tomato are 30. The emping crackers on top or on the side are another 50 for a small pile.
It is a Rp 25,000 to 40,000 bowl in Jakarta, and it is nearly always eaten with rice, so plan on 630 to 700 calories for the meal. For that you get only about 20g protein, which is not great value. The Betawi soto is a comfort food, not a protein dish.
The trick is that the fat floats. If you eat the meat and half the broth, you are closer to 280 calories. If you drink every drop and dip the emping in it, you are at 415 before rice.
