The noodle itself is steamed rice flour and water, about 65 calories per 50g nest. Two nests is 130. Nothing is fried and nothing has oil in it. The coconut is 20g of fresh grated white coconut at about 55, and the orange sugar is 12g at 25. That is the 210 plate for about S$1.50. It is a breakfast with fewer calories than a single kaya toast slice with butter.
The stall decides the sugar. Some pour the sugar on with a small spoon, some with a big one. Two spoons of the orange sugar and a heap of coconut takes the same plate to about 260. Gula melaka, which is sold as the premium option, is the same calories as white sugar per gram but the stalls use more of it because it is softer, so a gula melaka plate is usually 20 to 30 higher.
Where it goes wrong is quantity. Putu mayam is sold in stacks of 5 or 10 nests for the family, and eating 5 nests with coconut and sugar is about 480. It is light per nest and dangerous per stack. The Malay version with a thicker noodle, called putu mayong, is about the same per nest.
