Marmite chicken is one of those dishes that tastes way too good for what it does to your day. The chicken gets battered and deep fried until crispy, then it is tossed in that dark sticky glaze made from Marmite, sugar, honey or maltose and a bit of soy. That glaze is where the magic and the damage both live, because it is essentially caramelised sugar clinging to fried chicken. At around 580 calories a plate, it is one of the heavier zi char chicken dishes, with the fat coming from the deep fry and the carbs coming straight from the sweet glaze.
The glaze thickness is everything here. A light Marmite coating is one thing, but some shops drench it so thick and glossy that every piece is candied, and that easily adds 100 to 150 calories of pure sugar. Because it is deep fried, you also cannot pull skin or batter off to save much, the calories are baked into the whole piece. If you love it, the move is to treat it as a shared table dish, take two or three pieces for the taste, and not make it your personal protein main. Pair it with steamed veg and one scoop of rice and you keep the meal from running away from you.
