It looks like a fruit salad and eats like a dessert. The pineapple, cucumber, turnip and greens on a plate come to about 50 calories. Everything else is added. The dressing is hae ko, black prawn paste, mixed with sugar, tamarind, lime and chilli, and the stall uses about 60g of it, which is around 190 calories, most of it sugar. Then two pieces of you tiao and a tau pok, both fried, about 200. And 20g of crushed peanuts at 115. That is how a vegetable plate reaches 559.
The famous rojak stalls, the ones with a queue, tend to toast the you tiao and tau pok over charcoal first, which makes them crispier and slightly drier. It does not change the calories much. What changes the calories is the second spoon of dressing and the extra peanuts they put on the S$5 plate, which takes it to around 650.
The Malay style rojak buah, fruit only with a thinner dressing, is about 300. The mamak pasembur, which is fried fritters under a sweet potato gravy, is 700. Chinese rojak sits between them. The fruit is the cheap part of all three. The fried pieces and the dressing decide the number.
