People assume boiled is lean. It is not, when the cut is belly. Boiling renders some fat into the pot, but 100g of bossam pork is still about 290 calories, and a share of 6 or 7 thick slices is 520. The 33g of protein is fine, but 50g of fat in one sitting is the number to look at.
The bossam kimchi is sweeter than regular kimchi. It is radish and cabbage in a gochugaru dressing with sugar, pear and often salted fish, and a 60g pile is about 75 calories with 8g of sugar. Still, the kimchi, cabbage wraps, raw garlic and saeujeot together are under 100 calories a share. The pork is 85 percent of the plate.
Delivery bossam at 35,000 to 40,000 won for a small order comes with the same set as jokbal: makguksu, a bowl of rice or two, sometimes a small sundae. Two people splitting a small order with the noodles and rice are at about 1,250 each. Some shops now offer a leaner cut (앞다리살 or 목살 bossam) which drops to about 200 kcal per 100g.
