Nem nuong is 650 calories for a set, and it is spread across five things so no single one looks bad. The pork sticks are the biggest: nem nuong is minced pork with pork fat, sugar and garlic, so 100g of grilled sticks is about 300 calories, and a set gives you four sticks. The sugar in the mince caramelises on the grill, which is why they taste sweet and why 10g of that 100g is sugar.
The wrapping is the second 230. Two sheets of rice paper are 60, the banh hoi or bun that goes inside is 110, and the ram chien, the deep fried rice paper strips that give the crunch, are 60 for a small handful. Then the sauce. Nem nuong sauce is peanuts, pork liver, glutinous rice, sugar and oil cooked into a thick dip, about 90 calories for a 50ml bowl, and many people go through two bowls.
Ordering a second round is the normal move because four sticks does not feel like dinner. Two sets is 1,300 calories. The lighter play is one set of nem plus extra greens and rice paper rather than a second set of everything: each extra stick is 75 and each extra sheet of rice paper is 30, so you can build a bigger meal for about 200 more instead of 650.
